loquats

halved, stones removed and finely chopped

halved or quartered

red onion

coriander

Juice of one lime

extra virgin olive oil

Instructions
Mix all ingredients in a small bowl and set aside to allow the flavours to develop.
Makes about 1 cup of salsa.
