Mix dry pudding ingredients together in a large bowl.
2 cups self-raising flour, ½ cup soft brown sugar, 1 tablespoon ground ginger, 1 teaspoon ground cinnamon, ½ teaspoon mixed spice, ½ teaspoon ground nutmeg, ¼ teaspoon salt
Mix wet ingredients together.
1 cup almond milk, ½ cup grapeseed oil, ¼ cup molasses, 1 teaspoon finely grated fresh ginger
Add wet ingredients to dry ingredients and stir to combine. Pour into a greased 8 cup capacity casserole dish.
Mix sauce ingredients together until sugar is dissolved, then gently pour over the pudding (this is easiest to do with the dish already on an oven rack).
2 cups boiling water, ¾ cup soft brown sugar, 2 tablespoon golden syrup, 2 teaspoon ground ginger
Bake for 35 minutes, then allow to cool for 10-15 minutes before serving.
Notes
Molasses can be substituted with golden syrup if needed.
