This pretty pink smoothie made with watermelon, raspberry, cucumber and mint is the ultimate hydrating, refreshing smoothie for a hot summer day.

Ingredients
Half a small watermelon
,
(2-3 cups, peeled and chopped)

cup
frozen raspberries
Half a telegraph cucumber
3-4
sprigs
fresh mint leaves
Ice
Instructions
Remove watermelon flesh and roughly chop.
Peel all or some of the skin from your cucumber if you like (I peeled about half of the skin so there wouldn't be too much in the smoothie).
Blend watermelon, raspberries, cucumber and mint until smooth. Top up with a little water or a handful of ice and blend again.
Serve immediately.
